Gluten-free Flour

We use a range of certified gluten-free flour, such as rice flour, corn flour, and hazelnut floor. They are certified vegan, certified paleo, certified Kosher, certified by coeliac UK and non-GMO Project Verified.

Our secret to reducing the reliance on any natural sweetener is to use as much fresh fruits as possible. We are proud to let you know that only around 3g of sugar is added into our madeleines/muffins/cupcakes! So you can enjoy our confectionaries with absolutely no guilt !

Monk Fruits Sugar

Extracted from monk fruit, monk fruit sugar is recognized as one of the few low and no-calories sweeteners. It is rated a zero on the glycemic index, and contains zero calories and zero carbs, so it won’t spike blood sugar.  Diabetics can incorporate it into their diet more easily than sugar.

Coconut Palm Sugar
   
Coconut Sugar is made from fresh coconut tree sap. It has a subtly sweet taste that is similar to brown sugar with a hint of caramel.
                 
According to the University of Sydney, online database of the glycemic index (GI) and glycemic load values of various foods, coconut sugar has a GI of 54, which is at the top end of the low GI category.

Rice Bran Oil

Rice bran oil is a good source of unsaturated fats, vitamin E, and other important nutrients.

Yes, our plant-based cream is 100% made of Italian rice! It is certified gluten-free, vegan, naturally lactose-free, and allergen-free! This is one of the reasons why even the elderly customers and kids enjoy our cupcakes so much!
